Hallelujah you can now eat cookies pre/post workouts 😀 Or as an afternoon/evening treat. Whatever your choice, these cacao cookies will brighten up your day and give you plenty of proteins and energy.
Protein Cookies Oreo style
Cookies made with chocolate protein powder, cacao and ground almonds. A creamy filling made with Greek yoghurt and vanilla protein powder. I mean what’s not to love?
- 1 1/2 tbsp maple syrup
- 1 scoop (30 g) chocolate protein powder
- 3 tbsp cacao powder (high quality)
- 2 tbsp ground almond
- 3 tbsp brewed coffee (cold)
- 1 tbsp coconut flour
- 1 tsp vanilla protein powder
- 4 tbsp greek yoghurt
Mix chocolate protein powder, cacao powder and ground almonds in a bowl.
Add maple syrup and coffee and mix well into a smooth batter. Add more coffee if too dry (just be careful not to make it too runny)
Place into a piping bag and pipe even circles (3 cm) onto a lined tray. You should have 18 small cookies. (Or double/triple the size if you want bigger but fewer cookies)
Run a tablespoon under cold water and use the underside of it to smooth over the top of the cookies to create an even surface.
Bake right Cookies for 6-8 minutes at 200C, fan.
Whisk the vanilla protein powder and the coconut flour into the yoghurt.
Once the cookies have completely cooled down, pipe the protein yoghurt mix onto half the batch of cookies. Place the other halfs on top.
Leave to chill before serving.
I kept mine in a jar in the fridge which made the cookies soft after a day. I didn’t mind as they just got soft and gooey. If you don’t want this, you just have to eat them straight away =)
