Fit for Fight Turkey Meatballs


I have a saying that life should never be Tuesday Meatballs. What I mean by that is that life is short enough as it is, and I would hate to live in the same pattern. Here I just symbolise it by saying no to eating meatballs every Tuesday (Not that there’s anything wrong with that). Weekly routines are a good thing, it’s just the concept of being too scared to break the ‘usual’.

Anyway, here is a recipe for delicious and super healthy turkey meatballs, that we actually had on a Tuesday. Haha They are served with a colourful veggie slaw and to balance it all, I made a greek yoghurt based dressing bursting with flavours. Nom nom nom

Rainbow slaw and fresh tasting meatballs

You’ll need:
Turkey Meatballs
1 pck. mince turkey
3 spring onions
1-2 shallots
1/2 red chili
2 garlic cloves
2 teaspoons dijon mustard
1 tablespoon curry powder
Salt and pepper 

Rainbow Veggie Slaw
3 carrots
1/2 red cabbage
1/2 sweetheart cabbage
1/2 fennel
5 radishes

Flavourful dressing
1 small pot Greek yoghurt
2 teaspoons honey
2 tablespoon apple cider vinegar
4 tablespoon coriander (or parsley if you’re not a fan)
1 lime zest and juice
1 tablespoon finely chopped ginger
Salt and pepper


How to:
Meatballs
Chop up the spring onions, shallots, chilli and garlic.
Mix well with the mince in a large bowl.
Add the mustard and season with salt and pepper.
Leave to rest for about 30 minutes.

Using a spoon and the palm of your hand,
shape the mince into flat meatballs and lay on a baking tray with baking paper. I added some seeds on top, but this is optional.
Bake in the oven for 20-25 minutes depending on how big you make them.

Veggie Slaw
Using a big knife, carefully shred all the veggies as finely as possible and mix together. Drizzle with lime juice.

Dressing
Easy peasy – simply just mix together all the ingredients and flavour with salt, pepper and lime juice.
