Ahhh. It’s morning, the coffee brewer is on and you can smell the freshly brewed mocha. The sun is beaming in from the window and it’s time to make your favourite breakfast; banana pancakes. But wait. You don’t have any bananas. Oh dear! Fear not – I’ve got you =)
They’re high in fibres so remember to drink lots of water with them.
Healthy pancakes – no bananas
I love pancakes. Especially for breakfast. I usually make them with bananas and eggs, but today I didn’t have any bananas. Oh well, challenge accepted. I made these with coconut flour, oats, ground almonds and they’re delicious.
- 50 g oats (organic)
- 15 g coconut flour
- 15 g ground almonds
- 1 tbp baking powder
- 1 egg
- 1/2 dl milk (your preferred one. I used oat)
- 1 pinch salt
Weight out all the dry ingredient and mix.
Add the egg and mix well.
Then add the milk and stir until you have a half liquid/half solid batter.
Heat up a pan with some coconut oil and pour the batter into small pancakes. Approx 2 tbsp batter per pancake.
Bake 2-4 minutes each side – or until golden brown where it slips the pan easily.
Serve with maple syrup/agave nectar and fresh fruit. I used blood orange and maple syrup baked pineapple. (these exotic fruits works very well with the coconut flavour in the pancakes) Yuuuuum
