Waffles with creamy blood orange yoghurt-nicecream


Yuuuum! Ever since I bought my waffle moulds I simply can’t stop trying new recipes. Some better than others. Haha This one turned out VERY delicious so had to share it with you all.

Besides the blood orange nicecream I served it with fresh fruit and a vegan dark chocolate spread. The bitter-sweet creaminess from the nicecream is not a step you want to miss out on. Trust me! Made the whooole difference =)

This recipe is super easy to make – use a hand mixer if you have one. If not, it’s super easy using a wooden spoon as well.

Sweet waffles with blood orange nicecream
(makes 6)

You’ll need:
150 g flour
1 teaspoon baking powder
1 teaspoon sugar
1 large free-range egg
240 ml milk (I used oat)
1 tsp vanilla sugar

Blood orange nicecream
500 g thick yoghurt (I used Dorset Dairy Strained Whole Milk Yoghurt)
1-2 blood oranges

How to:
Start with the nicecream.
Simply pour the yoghurt out in a bowl. Squeeze the orange(s) and gently stir into the yoghurt. Put in the freezer if you’re making the waffles straight away. If not, leave in the fridge and put in freezer 15-20 minutes before serving.

Waffles:
Mix all the dry ingredients together in a large bowl. Gradually beat in the egg, then add the milk slowly, whisking well to get as smooth a batter as possible.

Grate in the zest from one of the oranges (optional)

If you’re using a waffle machine get it ready and proceed as usual. If you’re making them in moulds like me, simply pour in the batter with a spoon until just below the edge and bake in the oven for roughly 15 minutes at 180C.
