Spicy and Salty Almonds

Food prep! Oh boy. How easy is it to grab something unhealthy when you’re on the go? When I’m travelling, I always get so tempted to eat something from the many restaurants/cafes you find in an airport. Because well, all I have to do is wait, right?

Therefore I always make sure to food prep in advance for longer journeys. Because my flight for this particular food-prep is only one and a half hour long I’ll be leaving with salty almonds and a lovely mix of berries. But did you know that you can actually travel with a lot of food items? Carrot/cucumber/celery sticks, peanut butter (counts as liquid though) fruit, even stuff like salads and sandwiches. Of course, always check with the regulations but as me travelling from UK-Denmark I’m all good to go with my little healthy snacks.

P.s Please consider your fellow passengers, so don’t bring anything that smells too much XD

These spicy nuts are so delicious and crunchy. They’re perfect for the little hunger, on the go or you can even add them in curries for extra flavour 🙂
No more store-bought flavoured nuts for you.

Salty Almonds with Spicy Spices

You’ll need:
4 Tsp salt (I sed a mix of onion salt, herbal salt from Herbamare and pink Himalayan salt)
2 tsp smoked paprika
Pinch of chilli flakes
Juice from half a lemon and half a lime
100 g almonds
50 g cashews
(you can use whatever nuts you have lying around, as long as they’re unsalted)
1 tbsp agave nectar(honey

Optional:
Pinch of tarragon (A little weird I know, but if you happen to have it around, toss it in the mix for a weirdly and wonderful extra flavour)

How to:
In a bowl mix all the spices into a thick paste.
Add the nuts and gently mix, making sure they’re well covered in the spice mix.

Add the nectar/honey and spread all the nuts on a tray with baking paper.

Bake in the oven 150 C for roughly 15 minutes.
(Keep an eye on them and stir halfway)

Tip:
Store in an airtight container and they’ll stay fresh and crispy for as long as you can keep them 🙂
