Tacos, tacos, tacos. I love tacos. Who doesn’t, right? I mean it’s the perfect combo of all good things. AND it’s so customizable that you can just fill it with all of your favourite ingredients. Or turn it vegetarian/vegan. Or go super simple and follow this recipe that I’ve created using all of the favourite ingredients as for when I was a child and had tacos for the first time. (I ate 12 shells – I kid you not)
Did you know that you can’t get tacos in Mexico at lunchtime? That’s because Mexicans eat their biggest meal in the afternoon. So I guess that they, unlike me, don’t want to eat 12 tacos. Haha
This particular recipe is with lean, organic mince as I just find it goes so well with taco shells and all the trimmings. I’ve LOADED it with lots of veggies so you get extra nutrition and if you have (picky) kids they’ll get more greens without even realising. Ahaaaa, clever right!?
Favourite Tacos
An all time favourite recipe for tacos. It's kids and adult friendly and provides you with lots and lots of veggies. Both hidden and in full sight. Eat the rainbow 🙂
- 1 pk Taco shells
Mince with lots of veggies
- 1 big onion
- 2-3 cloves garlic
- 1 chilli ((leave out or only use as much as you/your kids can handle))
- 500 g 5 % organic beef mince
- 1 very large carrot ((or about 2-3 medium size))
- 1 zucchini
- 1-2 peppers (different colours)
Spices
- 1 tbsp Mexi-mix
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 4 tbsp, topped homemade tomato ketchup ((or or 2 tbsp ketchup and 2 tbsp tomato paste))
- Seasoning
Salat and vegetables (fillings)
- 1 large romaine lettuce ((or 2 Little Gem lettuce))
- 1 pk small tomatoes
- 1/2 cucumber (organic)
- 1 tin sweet corn
Chop onion, mince the garlic and deseed the chilli + chop finely.
Heat up a large frying pan with some oil, mexi mix, ground cumin and fry chilli, onion and garlic for a few minutes until the onions have softened.
Add the mince and cook for a LONG time. Make sure you "chop" out large lumps of meat using the spatula.
Add carrot, zucchini, ketchup (+ tomato paste if using option no. 2) paprika and seasoning. Keep on low heat and stir occasionally.

Heat up the taco shells in the oven and serve in a bread basket. Lay out all of the vegetables and condiments in bowls with spoons and let each person build their own taco.
When people ask me what my favourite dish is… I honestly can’t pick just one. I think most foodies struggle with that. It depends on mood and season, just to name a few factors. But if I MUST choose, it’s D-Day on Earth but I’d been given one last meal I’d go for tacos. Haha, I’m not sure why. I just love the crispiness of the shells mixed with the fact that you can customise it to whatever your liking. As a result of this, tacos are one of those dishes that you can serve and everyone will be on board with. If you don’t eat meat they’re just as good with chargrilled vegetables or yes.
