And as my hubby and I were going on holiday, I needed to use the (very) ripe bananas we had knocking around. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I wanted to make it gluten-free as well, as bread can, sometimes, make the both of us bloated. And with the fore coming week in bikini and boardies I thought I\u2019d try and make it with coconut flour. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The result is a very moist, spongy banana bread. I\u2019d almost be tempted to call it a cake because the coconut flour gives it a very cake-ish texture and the ripe bananas helps to make it as sweet as a cake &#8211; just without feeling guilty \ud83d\ude42 Win! <\/p>\n\n\n\n<!--WPRM Recipe 981-->\n<div class=\"wprm-fallback-recipe\">\n\t<h2 class=\"wprm-fallback-recipe-name\">Glutenfree banana bread with coconut flour<\/h2>\n\t<img decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"https:\/\/ryeinthesky.com\/wp-content\/uploads\/2019\/05\/B7AEEA73-ED8E-46E8-B395-5047E8D26E2C-150x150.jpeg\"\/>\t<p class=\"wprm-fallback-recipe-summary\">\n\t\t<p>Healthy and glutenfree banana bread that tastes as good as a cake. It\u2019s super moist and a winning combo is always banana and chocolate. I used 100% dark chocolate but you can use 70-85% if you prefer \ud83d\ude42<\/p>\t<\/p>\n\t<div class=\"wprm-fallback-recipe-ingredients\">\n\t\t<ul><li>4 small very ripe bananas (or 3 medium )<\/li><li>4 tbsp Peanut butter  (or any nut butter will do)<\/li><li>2 eggs (room temperature )<\/li><li>1\/2 cup coconut flour <\/li><li>1\/2 tsp baking powder<\/li><li>1\/4 tsp salt<\/li><li>1\/2 cup oat milk (or your preferred milk)<\/li><li>1 bar dark chocolate  (half for the batter, half on top.)<\/li><\/ul>\t<\/div>\n\t<div class=\"wprm-fallback-recipe-instructions\">\n\t\t<ol><li><p>Preheat oven to 180 C. Brush the inside of the  loaf pan with coconut oil.<\/p><\/li><li><p>In a big bowl, combine bananas, vanilla, oat milk and peanut butter, mix well until combined, smooth, and creamy.<\/p><\/li><li><p>Add in the eggs, one at a time. <\/p><\/li><li><p>Add coconut flour, baking powder, salt and chocolate (50 g chopped into chunks). Miix again until combined.<\/p><\/li><li><p>Pour batter into prepared pan and smooth top.<\/p><\/li><li><p>Bake for 20 minutes or until tester inserted into center comes out clean. Remove from oven and place on wire rack to cool for 20-60 minutes. Then carefully remove bread from pan and\u00a0pour the melted chocolate on top. Let cool a bit before serving.<\/p><\/li><\/ol><h4>Chocolate spread<\/h4><ol><li><p>In a small, microwaveable  bowl, melt half of the chocolate (25 g) slowly in the microwave. Stir often and careful not to burn it. When melted add the other 25 g Andy mix well until completely melted. Add the coconut oil.<\/p><\/li><li><p>Pour over the now cooled down banana bread \u00e8t voil\u00e1. <\/p><\/li><\/ol>\t<\/div>\n\t<div class=\"wprm-fallback-recipe-notes\">\n\t\t<blockquote>\n<p>Feel free to add bonus ingredients such as walnuts, a nip cinnamon etc. You can also make a marble version where you divide the batter in two and add cocoa powder to half and then mix carefully.
