Well, wonder no more &#8211; I&#8217;ve got you!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I actually used to be TERRIFIED of&nbsp;<strong>resistant starch which is what you find in white potatoes.<\/strong>&nbsp;However, when digested, white potatoes pass through the large intestine where it can feed on the good bacteria in your gut. This is beneficial for blood sugar control and insulin sensitivity.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sweet potatoes are considered a low-carb food. They\u2019re also high in protein and fibres.&nbsp;<br>Low carbs = low glycemic index =  it\u2019s more slowly digested. Here are a few facts about sweet potatoes and their benefits<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Sweet potatoes are\u00a0<strong>high in both vitamin C and beta-carotene (the same stuff you find in carrots)<\/strong>\u00a0which means they help boost your immunity and is good for your skin.<\/li><li>Because of their\u00a0<strong>high fibre content<\/strong>, sweet potatoes help to prevent constipation and promote regularity for a healthy digestive tract.<\/li><li>About 12% of the starch in sweet potatoes is\u00a0resistant starch<a href=\"https:\/\/www.health.com\/nutrition\/sweet-potato-health-benefits\">.<\/a>\u00a0This is a fibre-like substance your body doesn\u2019t digest, which was found to actually help burn fat after a meal.<\/li><li>Just one serving will give you more than 400 % of your daily vitamin A requirement<\/li><li><\/li><li>When you add up the two, there\u2019s no clear nutritional winner &#8211; they\u2019re both kind of super veggies. Just don\u2019t fry them in lots of oil\/butter, load them up with things such as heavy cream, bacon etc.<\/li><\/ul>\n\n\n\n<!--WPRM Recipe 1107-->\n<div class=\"wprm-fallback-recipe\">\n\t<h2 class=\"wprm-fallback-recipe-name\">Mexican shredded beef<\/h2>\n\t<img decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"https:\/\/ryeinthesky.com\/wp-content\/uploads\/2019\/07\/IMG_6098-150x150.jpg\"\/>\t<p class=\"wprm-fallback-recipe-summary\">\n\t\t<p>Once the meat is cooking, this is a super easy recipe with a divine taste.<\/p>\t<\/p>\n\t<div class=\"wprm-fallback-recipe-ingredients\">\n\t\t<ul><li>600 6 beef (I used topside but use whatever your butcher has got for you :))<\/li><li>4 garlic cloves<\/li><li>1 onion (cut into large chunks (keep the skin and toss them in the mix))<\/li><li>1 tbsp tomato paste<\/li><li>1 tbsp  brown sugar<\/li><li>5 tsp mixed spices (whatever you have handy. I used cumin, cumin seeds, chilli flakes, garlic pepper, Mexico spice, oregano)<\/li><li>1 tsp smoked paprika<\/li><li>1 tbsp hot chilli sauce ((Sriracha is the best))<\/li><li>2 cup beef stock ((500 ml))<\/li><li>1\/2 tin tomato <\/li><li>3\/4 cup  orange juice (185 ml))<\/li><li>1\/2 lime juice<\/li><\/ul>\t<\/div>\n\t<div class=\"wprm-fallback-recipe-instructions\">\n\t\t<ol><li><p>Preheat oven to 160 C<\/p><\/li><li><p>In a large pot with some olive oil and a tsp butter, brown the onion and garlic. Remember to add the onion\/garlic skins too as these add extra flavour.<\/p><p>Then add the beef (patted dry with kitchen towel) and brown\/sear on all sides<\/p><\/li><li><p>Remove the beef and put on a plate<\/p><\/li><li><p>Add the orange juice and lime juice, and scrape the bottom of the pot so the brown bits mix into the liquid.\u00a0Add remaining ingredients, mix, then transfer the sauce to a large oven dish and pour over the sauce.<\/p><\/li><li><p>Cook in oven nice and slow for 2-3 hours pouring the sauce over the beef every now and then. Make sure the beef is nice and tender and shreddable before moving from oven.<\/p><\/li><li><p>When the meat is done, remove from the sauce. Shred using two forks.<\/p><\/li><li><p>Bring the sauce back to the pot (remove the onion\/garlic skins) and let it simmer so that it thickens slightly.
